Watercress may not get a lot of publicity, but it should: this nutrient-dense vegetable is rich in antioxidants and adds a super nutritional punch to any meal. Watch as Nutrisystem dietitian Mandi Knowles shows you how easy it is to pair this underappreciated, peppery-tasting veggie with Nutrisystem’s Mushroom Risotto to create a meal occasion that’s sure to satisfy.

Watercress Risotto:

Preparation instructions:

  • Cook Mushroom Risotto on high for 1-1 1/2 minutes; empty into a bowl
  • Cut stems from watercress add then add the watercress leaves to the risotto

So people think kale is the healthiest thing you can eat. But ounce for ounce, watercress is the most nutrient-dense food there is. [0:00:14] These little leaves are loaded with antioxidants, and an easy way to eat it is to just use it as a topping on our Mushroom Risotto.

To make the Mushroom Risotto, first you’re going to open the pouch. Microwave on high for 1 to 1 1/2 minutes, then empty the risotto into a bowl.[0:00:30]

So to prepare the watercress, all you really need to do is just cut the stems off the leaves, and just toss a much in the Mushroom Risotto. And it adds a fresh, peppery flavor to the risotto. [0:00:42]
