Amazingly flavorful and so versatile, sweet potatoes are one of our favorite SmartCarbs. You can spiralize them and make delicious veggie noodles, mash them up and use them as a base for muffins (get the recipe here) or load them up with toppings like in this Loaded Mexican Baked Sweet Potato.
But one of our favorite ways to enjoy sweet potatoes is to slice them up, toss them in spices and bake them for a healthy take on a fast-food favorite. Sweet potato fries are a delicious and simple side. Here’s how to make them:
2 medium sized sweet potatoes
Zero-calorie cooking spray
Cinnamon, to taste
1. Preheat oven to 450 degrees F.
2. Slice sweet potatoes into long, fry-like strips, spray with cooking spray then sprinkle with cinnamon or salt and pepper.
3. Bake until fries are tender (about 20 minutes). Turn fries occasionally.
