This Tropical Gazpacho Soup recipe is so incredibly palate-pleasing, you’ll want to eat it every day. The good news is? You can!

Counting as just half of a SmartCarb and one Vegetable on Nutrisystem, this soup is as healthy as it is delicious.

Servings: 2 (1 serving = ½ cup)

Calories per Serving: 84

On Nutrisystem, Count As: ½ SmartCarb and 1 Vegetable

Ingredients:

  • 1 cup vegetable juice, low sodium
  • ¾ cup cucumber, diced with the peel
  • ¾ cup red pepper, diced
  • ¾ cup yellow pepper, diced
  • ¾ cup red onion, diced
  • ¾ cup pineapple, diced
  • ¾ cup mango, diced
  • 1 clove garlic
  • 2 Tbsp. cilantro
  • 1 lime, juiced
  • Black pepper, to taste

Directions:

  1. Reserve ¼ cup of each: diced cucumber until mango
  2. Process all ingredients in a food processor or blender until well blended
  3. Add the reserved ingredients to the soup and stir
  4. Serve immediately or refrigerate before serving
