Ingredients:
- 1 cup vegetable juice, low sodium
- ¾ cup cucumber, diced with the peel
- ¾ cup red pepper, diced
- ¾ cup yellow pepper, diced
- ¾ cup red onion, diced
- ¾ cup pineapple, diced
- ¾ cup mango, diced
- 1 clove garlic
- 2 Tbsp. cilantro
- 1 lime, juiced
- Black pepper, to taste
Directions:
- Reserve ¼ cup of each: diced cucumber until mango
- Process all ingredients in a food processor or blender until well blended
- Add the reserved ingredients to the soup and stir
- Serve immediately or refrigerate before serving
