Grilled Asparagus Caesar Salad

Salads are a classic go-to when you’re trying to eat healthy. But when you’ve been on a healthy kick for a while, it’s easy for salads to start feeling bland. When you find yourself in this salad slump, you know it’s time to spice things up—and that’s where this delicious Grilled Asparagus Caesar Salad comes into play!

Caesar salads are delicious and healthy yet simple, which means they’re the perfect candidate for a makeover. But how do you make over a salad? Surely you can’t put mascara and blush on a salad… right? Right!

Instead of using eyeliner to glamorize your Caesar salad, you’ll be adding grilled asparagus. Asparagus comes from the Liliaceae family and is related to onions, garlics, chives and shallots—a fabulous family if you ask us!

Just like all of our other delicious recipes here on the Leaf, this one is easy-peasy to whip up. There are two main parts of this Grilled Asparagus Caesar Salad: the Caesar dressing and the salad itself. The main ingredients that go into the dressing are nonfat Greek yogurt, Parmesan cheese and nonfat milk. If that doesn’t sound easy enough, the salad is even simpler to put together. You’ll grill the trimmed asparagus over medium-high heat until they’re slightly charred. Once they’re grilled, you’ll just need to top off the salad with croutons, Parmesan cheese and the Caesar dressing.

Ingredients:

  • Caesar Dressing
  • ½ cup plain nonfat Greek yogurt
  • ½ cup parmesan cheese
  • 2-4 Tbsp. nonfat milk
  • 2 tsp. olive oil
  • 2 tsp. Worcestershire sauce
  • 1 garlic clove
  • 1 tsp. Dijon mustard
  • 1 Tbsp. lemon juice
  • Black pepper, to taste
  • Salad
  • 1 lb. asparagus, ends trimmed
  • 1 Tbsp. olive oil
  • 1 cup croutons
  • ½ cup Parmesan cheese

Directions:

  1. To make Caesar dressing, combine yogurt, ½ cup cheese, 2 tablespoons milk, oil, Worcestershire, garlic, mustard and black pepper in a food processor or blender. Process until well combined. Add more milk for thinner consistency. Stir in lemon juice as last step.
  2. Toss asparagus in oil and grill over medium-high heat until slightly charred.
  3. Serve topped with Caesar dressing, croutons and ½ cup Parmesan cheese.
