On Nutrisystem, Count As: 1 SmartCarb, 2 PowerFuels and 1 Vegetable

Ingredients:

  • 5 oz. skinless chicken thigh, uncooked
  • Dash of paprika
  • Dash of cumin
  • 4 slices of onion, cut into 1-inch pieces
  • 4 slices of bell pepper, cut into 1-inch pieces
  • 4 slices of zucchini, cut into 1-inch pieces
  • 1 tsp. olive oil
  • Salt and pepper, to taste
  • ½ cup cooked brown rice
  • Wooden skewers

Directions:

  1. Cook brown rice according to package directions.
  2. Soak 1 wooden skewer in water for at least 10 minutes. Heat broiler.
  3. Season the chicken with paprika and cumin.
  4. Thread onto the skewers with the chicken, bell pepper, onion and zucchini.
  5. Drizzle the chicken and vegetables with the oil and season with salt and black pepper.
  6. On a rimmed baking sheet, broil the kebabs, turning once, until the chicken is cooked through, about 15 minutes.
  7. Serve with brown rice.
