To achieve the dreamy, creamy perfect pudding texture, you’ll start by steaming three cups of cauliflower until it’s very tender. Then you’ll blend the cauliflower, Chocolate Nutrisystem Shake Mix, cocoa powder, milk and a few other simple ingredients together. Let the mixture sit in the fridge for two to three hours and, once it’s ready, top it with fat-free whipped cream for a seemingly indulgent treat that won’t wreck your waistline!

Ingredients:
- 3 cups cauliflower florets, raw
- ½ cup fat-free milk
- 2 Tbsp. Chocolate Nutrisystem Shake Mix
- 1 Tbsp. unsweetened cocoa powder
- ½ tsp. vanilla extract
- 10 drops liquid stevia
- Pinch of salt
- 4 Tbsp. fat-free whipped cream
Directions:
- Steam cauliflower in a pot or in the microwave until very tender. Drain well.
- Add ingredients (except for whipped cream) to a blender and puree until smooth.
- Refrigerate for 2-3 hours.
- Divide into two bowls. Top each bowl with two tablespoons fat-free whipped cream and serve.
