Whatever the occasion may be, one thing is for certain—they’re bound to become a menu regular.

To make these Snowball Cookies, simply combine peanut butter, unsweetened cocoa powder, Truvia Brown Sugar Blend, vanilla extract, egg and baking soda. Once a dough-like consistency is formed, roll into one-inch balls and place on a greased baking sheet. Bake the batch of cookies for just seven minutes and let cool for five before rolling them in finely shredded coconut. Once the snowballs are covered, pack up and store in the fridge or enjoy while warm!

Ingredients:

  • ½ cup peanut butter
  • ¼ cup unsweetened cocoa powder
  • 2 Tbsp. Truvia® Brown Sugar Blend
  • 1 tsp. vanilla extract
  • 1 large egg
  • ½ tsp. baking soda
  • ¼ cup unsweetened finely shredded coconut

Directions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, stir all ingredients except for the coconut.
  3. Roll dough into 1-inch balls and place on a greased baking sheet.
  4. Bake for 7 minutes. Let cool for 5 minutes.
  5. Roll in coconut.
