Ingredients:

  • 1 Tbsp. olive oil
  • ½ onion, chopped
  • ½ red bell pepper, chopped
  • 4 oz. sliced mushrooms
  • ¼ cup green peas
  • ¼ cup chopped carrots
  • ½ cup nonfat plain Greek yogurt
  • ¼ cup nonfat milk
  • ½ cup vegetable broth, low sodium
  • ½ cup shredded cheddar cheese, reduced fat, divided
  • 2 tsp. Dijon mustard
  • 1 tsp. black pepper
  • ½ tsp. garlic powder
  • 2 (4 oz.) cans chunk white albacore tuna in water, drained
  • 2 cups whole wheat pasta, cooked al dente

Directions:

  1. Preheat oven to 350°F.
  2. In a large pan, heat olive oil over medium-high heat. Sauté the onions, bell peppers and mushrooms until soft.
  3. Add the peas and corn and cook until soft.
  4. In a large bowl, mix together the Greek yogurt, milk, vegetable broth, ¼ cup cheddar cheese, Dijon mustard, black pepper and garlic powder.
  5. Add pasta and veggie mixture. Toss to combine.
  6. Fold in the tuna.
  7. Pour the mixture into a casserole dish and top with the remaining ¼ cup of cheddar cheese.
  8. Bake for 30 minutes.
