Pumpkin Parfait

This delicious Pumpkin Parfait recipe is a fall favorite among our readers. That’s probably because it’s got all the quintessential flavors of the season (did someone say pumpkin spice?!) without all the diet plan destruction typical of these treats.

But probably the best thing about this pumpkin-packed healthy recipe is the make-your-own granola. It’s the perfect blend of sweet and savory, and gives the yogurt a sweet and crunchy kick. Plus, it’s not packed with added sugar like so many store-bought varieties.

On Nutrisystem, Count As: 1 PowerFuel, 1 SmartCarb and 1 Extra

Ingredients:

  • Yogurt
  • 1 cup plain nonfat Greek yogurt
  • ¼ cup canned pumpkin puree
  • 1 tsp. pumpkin pie spice
  • 1 packet Stevia
  • ½ tsp. vanilla extract
  • Granola
  • ½ cup rolled oats
  • ¼ cup canned pumpkin puree
  • 1 tsp. pumpkin pie spice
  • 2 Tbsp. pumpkin seeds
  • 2 Tbsp. sugar-free maple syrup
  • ¼ cup water

Directions:

  1. Preheat oven to 350°F.
  2. In a bowl, mix together all the granola ingredients.
  3. Spread mixture out on a parchment-lined baking sheet.
  4. Bake for 30-40 minutes until crisp, stirring half way.
  5. Let cool.
  6. For the yogurt: Combine yogurt, Stevia and vanilla in a bowl.
  7. Take half of the yogurt mixture into another bowl and add pumpkin puree and pumpkin spice.
  8. Divide mixture among two bowls or parfait glasses, layering with the vanilla yogurt, then some granola, pumpkin yogurt and top with the remaining granola.
