Ingredients:

  • 4 cups eggplant
  • 2 tsp. olive oil
  • 2 Tbsp. lemon juice
  • 3 cloves garlic
  • 1 tsp. onion powder
  • ¼ tsp. cumin
  • 1 tsp. fresh parsley
  • 2, 6-inch whole wheat pitas

Directions:
