Ingredients:

  • 1 cup stevia-sweetened chocolate chips
  • 12.3 oz. silken-firm tofu
  • 2 tsp. cocoa powder
  • 1 tsp. pure vanilla extract
  • 2 Tbsp. unsweetened vanilla almond milk
  • 1/8 tsp. salt
  • 2 packets stevia
  • 1 cup raspberries (or strawberries, if preferable)

Directions:

  1. To melt the chocolate, place it in a wide, shallow bowl and put it in the microwave.
  2. Heat it on medium-high for about 1 minute. Remove from the microwave and stir.
  3. Repeat heating at shorter intervals, 15 to 20 seconds, stirring in between, until the chocolate is completely melted and has a smooth consistency.
  4. Combine the melted chocolate, tofu, cocoa powder, vanilla extract, almond milk, salt and stevia into a food processor and puree until very smooth.
  5. Pour into a glass pie dish and top it with raspberries.
  6. Refrigerate for 2-3 hours. The mouse becomes firmer the longer it sits.
