Cheesy Root Vegetable Tian

Pronounced ty-an, Tian is a dish named after the large, round French earthenware baking dish in which it is traditionally cooked. Tian recipes typically include a flavorful combo of roasted vegetables arranged in a beautiful spiral pattern and often topped with cheese.

On Nutrisystem, Count As: 1 Powerfuel, 1 Smartcarb, 1 Vegetable and 2 Extras

Ingredients:

  • 4 tsp. olive oil
  • 1 large white onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sweet potato, sliced ¼ inch thick
  • 2 cups parsnip, sliced ¼ inch thick
  • 3 cups beets, sliced ¼ inch thick
  • 2 cups tomato, sliced ¼ inch thick
  • ½ tsp. dried thyme
  • ½ tsp. dried rosemary
  • 1/8 tsp. black pepper
  • 1 cup Parmesan cheese, low sodium, grated

Directions:

  1. Preheat oven to 375 F.
  2. Coat a baking dish with zero-calorie cooking spray.
  3. Heat 2 teaspoons of olive oil in a large skillet over medium heat.
  4. Once hot, add the onions and garlic and sauté until translucent, about 5 minutes.
  5. Spread onion and garlic mixture on a bottom of the greased baking dish.
  6. Layer sweet potato, parsnip, beets, and tomato alternately in the dish on top of the onion and garlic, fitting them into a spiral.
  7. Season with thyme, rosemary and black pepper.
  8. Drizzle the last 2 teaspoons of olive oil on top.
  9. Cover the dish and bake for 1 hour.
  10. Uncover the dish, sprinkle the Parmesan cheese and bake for another 30 minutes.
