Ingredients:
- 2 cups egg whites
- 1 cup fat-free cottage cheese
- ½ cup reduced fat shredded mozzarella cheese
- ½ cup roasted red peppers (jarred in water), thinly sliced
- ¼ cup fresh basil, thinly sliced
Directions:
- Preheat oven to 375°F.
- Mix all ingredients in a large mixing bowl.
- Spray 9½-inch pie dish with nonstick cooking spray and pour ingredients in.
- Bake for approximately 45 minutes or until center is set.
- Let cool, and then slice into 4 pieces.
