Servings: Makes 2 servings

On Nutrisystem, Count As: 2 Vegetables, ½ SmartCarb and 1 Extra

Ingredients:

  • Dressing
  • 1 Tbsp. orange juice
  • 1 Tbsp. red wine vinegar
  • 1 tsp. extra virgin olive oil
  • 1 tsp. honey
  • Pinch of salt
  • Salad
  • ½ cup canned sliced beets
  • ½ large cucumber, peeled and sliced
  • 2 cups arugula
  • ¼ cup red onion, thinly sliced
  • 1 orange, peeled and cut into slices

Directions:

  1. In a small bowl, whisk together dressing ingredients and set aside.
  2. Using a small heart-shaped cookie cutter, cut cucumbers and beets into heart shapes.
  3. Divide arugula into two bowls. Top with beets, cucumber, red onion and orange slices. Drizzle with dressing and serve.
