On Nutrisystem, Count As: 2 Vegetables, 1/2 SmartCarb and 1 Extra
- 1 Tbsp. orange juice
- 1 Tbsp. red wine vinegar
- 1 tsp. extra virgin olive oil
- 1 tsp. honey
- Pinch of salt
- ½ cup canned sliced beets
- ½ large cucumber, peeled and sliced
- 2 cups arugula
- ¼ cup red onion, thinly sliced
- 1 orange, peeled and cut into slices
- In a small bowl, whisk together dressing ingredients and set aside.
- Using a small heart-shaped cookie cutter, cut cucumbers and beets into heart shapes.
- Divide arugula into two bowls. Top with beets, cucumber, red onion and orange slices. Drizzle with dressing and serve.
