- 16 oz. whole grain penne pasta
- 1 Tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lb. lean ground turkey, raw
- 15 oz. ricotta cheese, part skim
- 2 cups shredded mozzarella cheese, part skim, divided
- 1 egg
- 28 oz. can tomato sauce, no salt added
- 6 oz. can tomato paste
- 1 tsp. Italian seasoning
- ½ tsp. black pepper
- 3 cups Swiss chard, chopped
- Preheat oven to 375°F. Spray a baking dish with nonstick spray.
- Bring a large pot of water to a boil. Cook pasta until al dente. Drain and rinse well. Return pasta to the pot and set aside.
- In a large pan, heat oil over medium heat. Add onions and garlic. Sauté for about 3 minutes.
- Add ground turkey to the pan and break up the meat. Cook for about 5-7 minutes, until turkey is fully cooked.
- In a separate bowl, combine ricotta cheese, 1 cup of mozzarella and the egg. Add the mixture to the cooked pasta and stir.
- Add the tomato sauce, tomato paste, Italian seasoning and black pepper. Stir to combine. Fold in the Swiss chard.
- Fold in the ground turkey mixture.
- Pour the pasta mixture into the baking dish. Top with remaining 1 cup of mozzarella.
- Bake for 25 minutes, until cheese is golden brown. Remove from the oven and let it sit for 5 minutes before serving.
