Want to make it heartier? Transform this tasty salad into a flex dinner by adding two tablespoons of slivered almonds and a half cup of chickpeas (or a slice of whole grain bread on the side).
This is a super simple salad with a lot of flavor. You have the peppery from the arugula, the sweetness of the beets, and the creaminess of the goat cheese. First, to make the salad, you’re going to take a bunch of arugula, about two cups. And you’re just going to take some roasted beets, you can buy these in the supermarket just already in a pouch or in a jar. Then add some goat cheese. Dress it with a little balsamic vinegar and a little bit of olive oil. And then just top with some fresh pepper and a little bit of salt.
