Ingredients:

  • 1 cup oats
  • ¼ cup nut butter
  • ¼ cup unsweetened shredded coconut
  • 1 large egg
  • 1 packet stevia
  • ¼ cup dried cranberries
  • ¼ cup pumpkin seeds

Directions:

  1. Preheat oven to 350 F. Spray baking sheet with nonstick spray.
  2. In a food processor, add oats and pulse until finely ground. Pour into a bowl.
  3. Add in nut butter, coconut, egg and stevia. Stir to combine.
  4. Gently stir in cranberries and pumpkin seeds.
  5. Spoon out 1-2 tablespoons of cookie mixture onto a baking sheet. Bake for 7-8 minutes. Let cool slightly before serving.
