To make these delicious Soft and Chewy Breakfast Cookies, simply add oats to a food processor or blender and pulse until they are a fine consistency. Pour the ground oats into a large bowl and add in a nut butter of your choice, coconut, egg and Stevia, and thoroughly combine until a cookie dough is formed. Gently stir in pumpkin seeds and spoon one-to-two inch tablespoons of the dough onto a lined baking sheet. Pop the Breakfast Cookies into the oven for about seven minutes and voila! Ingredients:
- 1 cup oats
- ¼ cup nut butter
- ¼ cup unsweetened shredded coconut
- 1 large egg
- 1 packet stevia
- ¼ cup dried cranberries
- ¼ cup pumpkin seeds
Directions:
- Preheat oven to 350 F. Spray baking sheet with nonstick spray.
- In a food processor, add oats and pulse until finely ground. Pour into a bowl.
- Add in nut butter, coconut, egg and stevia. Stir to combine.
- Gently stir in cranberries and pumpkin seeds.
- Spoon out 1-2 tablespoons of cookie mixture onto a baking sheet. Bake for 7-8 minutes. Let cool slightly before serving.
