Whip up a batch of these Soft and Chewy Breakfast Cookies in just ten minutes and enjoy on your way out the door. To make these delicious Soft and Chewy Breakfast Cookies, simply add oats to a food processor or blender and pulse until they are a fine consistency. Pour the ground oats into a large bowl and add in a nut butter of your choice, coconut, egg and Stevia, and thoroughly combine until a cookie dough is formed. Gently stir in pumpkin seeds and spoon one-to-two inch tablespoons of the dough onto a lined baking sheet. Pop the Breakfast Cookies into the oven for about seven minutes and voila!   • 1 cup oats
  • ¼ cup nut butter
  • ¼ cup unsweetened shredded coconut
  • 1 large egg
  • 1 packet stevia
  • ¼ cup dried cranberries
  • ¼ cup pumpkin seeds


  1. Preheat oven to 350 F. Spray baking sheet with nonstick spray.
  2. In a food processor, add oats and pulse until finely ground. Pour into a bowl.
  3. Add in nut butter, coconut, egg and stevia. Stir to combine.
  4. Gently stir in cranberries and pumpkin seeds.
  5. Spoon out 1-2 tablespoons of cookie mixture onto a baking sheet. Bake for 7-8 minutes. Let cool slightly before serving.
