Slow Cooker Artichoke Chicken with Potatoes and Sun-Dried Tomatoes

Ingredients:

  • 4 (3 oz) boneless chicken breasts
  • 1 (14 oz) can artichokes, drained, and reserve liquid
  • ½ cup sun-dried tomatoes, julienne (in dry packets; not in oil)
  • 2 cups quartered white potatoes
  • 2 cloves garlic, minced
  • 1 tsp. oregano
  • 3 Tbsp. fresh parsley, chopped
  • ½ tsp. black pepper
  • Slow Cooker Size: 4-quart or larger

Directions:

  1. Place chicken on the bottom of the slow cooker. Sprinkle chicken with oregano and pepper.
  2. Chop artichokes and add the rest of the ingredients to crock pot. Pour ½ of the reserved liquid from the artichokes.
  3. Cover, cook on LOW for 8 hours or HIGH for 4 hours.
