Ingredients:

  • 1 cucumber (English cucumber preferred)
  • 3 oz crab meat
  • 1 Tbsp. lemon juice
  • 1 tsp. light mayonnaise
  • 2 Tbsp. cilantro, minced
  • ¼ cup red onion, diced
  • Old Bay, to taste

Directions:

  1. Cut cucumber into one-inch slices. Scoop out the center of the cucumber.
  2. In a bowl, mix together crab meat, lemon juice, mayonnaise, cilantro, red onion and cilantro.
  3. Fill each cucumber cup with crab mixture. Sprinkle with old bay.
