Ingredients:

  • ½ cup zucchini or summer squash, finely grated
  • 1 Tbsp. onion, finely chopped
  • 1 egg
  • Salt and pepper, to taste

Directions:

  1. Mix all ingredients together in a large bowl.
  2. Spray a skillet with nonstick cooking spray and set to medium heat.
  3. Using a spoon, form mixture into croquettes and place into the skillet.
  4. Cook each croquette for a 2-3 minutes on each side until egg is cooked and croquettes are crispy. Remove from pan and enjoy.
