  • 1 cup rolled oats
  • 2/3 cup pecans halves
  • 1/3 cup almonds
  • 2/3 cup pumpkin seeds
  • 1 Tbsp coconut oil, melted
  • 1/3 cup maple syrup
  • 1 1/2 tsp. pumpkin pie spice
  • 1/3 cup dried cherries
  • 1/3 cup dried apricots, chopped
  • 1/3 cup golden raisins


  1. Preheat oven to 300°F.
  2. Place oats, pecans, almonds and pumpkin seeds in a large bowl.
  3. Pour the melted coconut oil, maple syrup and pumpkin pie spice over the oat mixture. Toss to coat.
  4. Pour the mixture onto a rimmed baking tray and spread out into one thin, even layer.
