Ingredients:

  • 2 cups cooked whole wheat fettuccine (can also use whole wheat spaghetti or linguine), reserve ½-¾ cup of pasta water
  • 1 Tbsp. light butter
  • 2 cloves garlic, minced
  • 2 tsp. whole wheat flour
  • 1 cup nonfat milk
  • 2 Tbsp. cream cheese, low fat
  • ¾ cup parmesan cheese
  • 1 Tbsp. fresh parsley, chopped

Directions:

  1. Cook pasta to al dente. Reserve ½-¾ cup of pasta water before draining pasta.
  2. To make alfredo sauce, melt butter in a pot and add garlic. After 1-2 minutes, add flour and stir until thick.
  3. Whisk in the milk. Add cream cheese and parmesan. Cook until smooth, about 5-7 minutes.
  4. Thin out the sauce with the ½ cup pasta water.
  5. Toss the alfredo sauce with pasta. Add more pasta water to thin out if needed.
  6. Garnish with chopped parsley.
