Ingredients:

  • 2 cups arugula
  • 1 cup sliced mushrooms
  • 1 cup asparagus, cut into thirds
  • 1 cup barley, cooked
  • 2 radishes, sliced
  • 2 tablespoons balsamic vinegar

Directions:

  1. Preheat grill to high heat or oven to 400 F.
  2. Lightly coat asparagus and mushrooms with nonstick spray.
  3. Grill until tender—2-3 minutes for asparagus and 10-15 minutes for mushrooms—or place on a baking dish and cook for 15 minutes in the oven.
  4. Place arugula, barley, radishes and cooked mushrooms and asparagus on a plate.
  5. Drizzle with balsamic vinegar.
