Welcome Summer with Grilled Sweet Potato Salad

The Star Ingredient: Sweet Potatoes

The star of this dish is the humble sweet potato, transformed into caramelized slices with a slight char from the grill. Paired with sweet potato’s natural sweetness are tender slices of red onion, which add a subtle sharpness that balances the dish beautifully. The salad is then adorned with crumbled feta cheese, offering a creamy and tangy contrast that complements the grilled vegetables perfectly.

A Flavorful Homemade Dressing

But what truly sets this salad apart is the homemade dressing—a simple yet flavorful blend of olive oil, garlic, Dijon mustard, honey and apple cider vinegar. This dressing ties everything together, infusing each bite with a harmonious mix of sweetness and acidity.

Nutritional Benefits of Grilled Sweet Potato Salad

Not only is this Grilled Sweet Potato Salad a feast for the taste buds, but it’s also a nutritional powerhouse. Sweet potatoes are rich in vitamins A and C as well as fiber and antioxidants, making them an excellent choice for a healthy diet.
