  • 1 Tbsp. canola oil
  • 1/2 onion, chopped
  • 3 eggs
  • 6 egg whites
  • 3/4 cup 1% cottage cheese
  • 3 oz. (3/4 cup) shredded gruyere cheese
  • 2 Tbsp. cornstarch
  • 1/4 tsp. dried thyme
  • 1/8 tsp. black pepper


  1. Boil a few cups of water.
  2. Preheat oven to 300°F. Place oven rack in the middle and lowest position. Place a baking dish filled with the boiling water on the lowest rack.
  3. Heat oil in a pan set to medium heat. Once hot, add onions and cook until caramelized.
  4. In a blender, combine eggs, egg whites, cottage cheese, gruyere cheese, cornstarch, thyme and black pepper.
  5. Pour egg mixture into greased muffin pan, filling 3/4 of the way. Sprinkle with cooked onions.
  6. Bake for 25 minutes in the middle rack.
  7. Let it cool for at least 5 minutes before removing onto a wire rack.
