Ingredients:

  • 1 cup whole wheat pastry flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. nutmeg
  • 1 large egg
  • 3 Tbsp. Truvia Sugar Blend (cane or brown sugar)
  • ¼ cup nonfat milk
  • ¼ cup nonfat plain Greek yogurt
  • 2 Tbsp. light butter, melted
  • 1 tsp. vanilla extract
  • 6 Tbsp. sugar free jelly

Directions:

  1. Preheat oven to 350°F. Spray a muffin pan with non-stick spray.
  2. Whisk egg, Truvia, milk, yogurt, butter and vanilla in a medium bowl until fully combined.
  3. Add flour, baking powder, baking soda and nutmeg.
  4. Stir until combined. Batter should be thick.
  5. Spoon batter into muffin tin. Fill about ²⁄₃ - ¾ the way full.
  6. Bake for 10-12 minutes. Remove from pan and let cool.
  7. Fill a pastry bag with jelly and insert tip into each end of the donut and pipe in some jelly. Or slice an opening in the side and insert filling.

  9. Whisk egg, Truvia, milk, yogurt, butter and vanilla in a medium bowl until fully combined.
  10. Add flour, baking powder, baking soda and nutmeg.
  11. Stir until combined. Batter should be thick.
  12. Spoon batter into muffin tin. Fill about ²⁄₃ - ¾ the way full.
  13. Bake for 8 minutes. Remove from pan and let cool.
  14. Fill a pastry bag with jelly and insert tip into each end of the donut and pipe in some jelly, or slice an opening in the side and insert filling.
