Ingredients:

  • 9 oz. lean ground turkey
  • 1 small onion, chopped
  • 3 medium potatoes, peeled
  • 1 ½ cups shredded carrot
  • 2 large whole eggs
  • 2 large egg whites
  • ¼ cup low sodium chicken broth
  • 2 Tbsp. whole wheat flour
  • 1 ½ tsp. black pepper
  • Zero calorie cooking spray

Directions:

  1. Preheat oven to 400°F.
  2. Add turkey to a greased pan on medium-high heat and cook, until it is no longer pink.
  3. Grate potatoes in a food processor.
  4. Put grated potatoes in a colander and squeeze excess water out.
  5. In a mixing bowl, combine all ingredients.
  6. Pour in a greased 8 x 8 baking dish.
  7. Spray top of it with cooking spray.
  8. Bake for 20 minutes.
  9. Lower heat to 325 °F and bake for another 30-40 minutes.
