Trips to the vending machine often end up in poor diet choices that can make you feel even more tired than you did prior to eating the snack. We’ve got a delicious recipe for a snack that is certain to give you the burst of energy you need to keep going all while staying on track with your healthy diet. Say hello to Pistachio Protein Bombs!

Filled with protein and loaded with sweet, pistachio flavor, these Protein Bombs are a tasty alternative to those sugar-filled, unhealthy treats you grab at work. This recipe uses your protein-packed Nutrisystem Shake mix at its base. Combine your shake mix with a cup of oats, unsweetened almond milk and a packet of sugar-free pistachio pudding mix. Mix all ingredients in a food processor until smooth and roll into the Pistachio Protein “Bombs.” To make sure all ingredients are set, freeze the bombs for 20 minutes before enjoying!

This recipe makes 12 balls and two balls count as one serving. On your Nutrisystem meal plan, each serving clocks in at 111 calories, half of a PowerFuel, half of a SmartCarb and one Extra. On Nutrisystem, Count As: ½ PowerFuel, ½ SmartCarb and 1 Extra

Ingredients:

  • 1 cup oats
  • 4 scoops (1/2 cup) Vanilla or Chocolate Nutrisystem Shake™
  • ½ cup unsweetened almond milk
  • 1 packet sugar-free pistachio pudding mix

Directions:

  1. In a food processor, process oats until it turns into a flour mixture
  2. Add the rest of the ingredients and process until smooth.
  3. Freeze for 20 minutes.
  4. Roll into balls.
  5. Store in an air tight container in the refrigerator.
