Cauliflower rice is a great replacement for regular rice in many dishes (think stir-fry and rice and beans). It’s got a similar texture to rice, and it soaks up any sauces or marinades you choose in a similar way.

You can turn cauliflower into rice. It’s super easy and the best part is you can enjoy as much as you like because cauliflower is unlimited on the Nutrisystem program.
To make cauliflower rice, you’ll use one small head of cauliflower. And you can make this in a food processor if you like, but I’m going to show you how to use a cheese grater to make it in case you don’t have a processor.
You’ll start by taking little chunks of the cauliflower head and just grating it as you would cheese with the cheese grater. Once you grate your cauliflower it will look like this. And when you do about half a head of cauliflower, you’ll have a whole bowl of it.
So we’ll take this over to the stove now and I’ll show you how to cook it. Spray a pan with cooking spray and then bring it to medium high heat. Then you’re going to add your cauliflower. Then we’ll cook this for about 10 minutes, stirring occasionally.
Once the cauliflower rice gets nice and tender, we’ll add some fresh lime juice and chopped cilantro. Then just give it a stir and let it mix for about 2-3 minutes.
You can pair the cauliflower rice with pretty much anything you would normally use rice with. But for today, I’ve paired it with the Nutrisystem Southwest Fiesta Melt. To make the Southwest Fiesta Melt, pull it out of the package, put it on a microwave-safe plate then put it in the microwave for about a minute 45, then let it stand to cool for about a minute in the microwave.

Ingredients:
- 1 small head of cauliflower
- Zero-calorie cooking spray
- 1 lime, juice and zest
- 1/4 cup cilantro, minced
Directions:
- Grate cauliflower florets on the largest holes of a cheese grater or pulse them in a food processor to create a rice-like texture.
- Spray a large pan with cooking spray and bring to medium-high heat. Add the cauliflower rice and cook for about 10 minutes, stirring occasionally.
- Once the cauliflower rice is tender and golden in color, add the lime juice, lime zest and cilantro. Mix well and continue cooking for 3-5 minutes.
- Remove and let cool before serving.
