Ingredients:

  • 1 small package of steamable riced cauliflower
  • 2 Tbsp. chopped onion
  • 1 small jalapeno pepper, chopped
  • 1 small tomato, chopped
  • 2 Tbsp. cilantro, chopped
  • 1 tsp. garlic power
  • Black pepper, to taste
  • 2 tsp. low fat cheddar cheese

Directions:

  1. Cook cauliflower according to package directions. Pour it into a mixing bowl
  2. Add the remaining ingredients and mix well.
  3. Top with cheese and serve.
