Ingredients:
- 5 Tbsp. shredded coconut, unsweetened
- 10 dates, pitted
- 2 Tbsp. water
- ¼ cup chocolate chips
Directions:
- Preheat oven to 350° F.
- Place shredded coconut on a baking sheet and toast for 5 minutes.
- In a food processor, blend dates and water. Add the shredded coconut and stir to combine.
- Roll cookies into balls and flatten with hand.
- Place cookies in the refrigerator for 10 minutes.
- Melt chocolate chips in the microwave or on the stove.
- Dip the cookies in the melted chocolate. Place in the refrigerator until the chocolate hardens.
