  • 5 Tbsp. shredded coconut, unsweetened
  • 10 dates, pitted
  • 2 Tbsp. water
  • ¼ cup chocolate chips


  1. Preheat oven to 350° F.
  2. Place shredded coconut on a baking sheet and toast for 5 minutes.
  3. In a food processor, blend dates and water. Add the shredded coconut and stir to combine.
  4. Roll cookies into balls and flatten with hand.
  5. Place cookies in the refrigerator for 10 minutes.
  6. Melt chocolate chips in the microwave or on the stove.
  7. Dip the cookies in the melted chocolate. Place in the refrigerator until the chocolate hardens.
