Ingredients:

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • ¾ cup canned diced tomatoes, drained
  • 1 can (15 oz.) black beans, drained and rinsed
  • ¾ cup corn
  • 1 tsp. chili powder
  • 1 tsp. cumin

  • 8 whole wheat tortillas, burrito size
  • 2 cups shredded Mexican cheese, reduced fat, divided

Directions:

  1. Preheat oven to 425F. Spray sheet pan with cooking spray.

  9. Remove the top sheet pan and place back in the oven for a few more minutes, until top is golden brown.
