On Nutrisystem, Count As: 1 SmartCarb and 1 PowerFuel
- 2 whole wheat tortilla
- 3 oz. cooked shrimp
- 2 tsp. chili powder
- ¼ cup, avocado, diced
- 8 tsp. pico de gallo
- Zero-calorie nonstick spray
- Preheat oven to 450 F.
- Toss shrimp with chili powder and place on a baking sheet and in oven for 2-3 minutes.
- With a cookie cutter or a cup, cut 3-4 medium circles out of each tortilla. Press each circle into a greased-lined muffin cup. Bake for 10 minutes or until crisp. Remove.
- Assemble the shrimp taco by placing 1 teaspoon of pico de gallo in a tortilla cup, followed by ½ tablespoon of avocado, then top with a piece of shrimp.
