Sometimes simple breakfasts are the best breakfasts. After all, most of us are rushing out of the door in the morning and need something quick and easy. That morning meal also needs to be satisfying to keep us full and energized all day. But most importantly, it should be a healthy and smart option that fits into a weight loss plan. While cooking up a warm egg breakfast may seem like a complicated task to squeeze into your morning, that’s not always the case! This Turkey Bacon Scrambled Eggs recipe is the perfect example.

To whip up this meal, get started by sautéing some sliced mushrooms, chopped bell peppers and cherry tomatoes in nonstick cooking spray. Cook them for three to five minutes until they start to get soft. Then add in chopped turkey bacon and continue cooking until it gets crispy. Finally, you’ll add in two scrambled eggs and stir them into the other ingredients. Continue stirring and scrambling until the eggs are fully cooked.

Ingredients:

  • 2 eggs
  • 2 pieces turkey bacon
  • ½ cup mushrooms, sliced
  • ½ cup bell peppers, chopped
  • ¼ cup cherry tomatoes, halved

Directions:

  1. Heat a skillet over medium heat and spray with nonstick cooking spray. Sauté vegetables for 3 to 5 minutes.
  2. Chop turkey bacon and add to the pan. Sauté until crispy.
  3. Add the eggs to the pan and stir into the other ingredients. Continue stirring and scrambling until fully cooked.
