Ingredients:
- 1 lb. ground sweet Italian sausage
- 3 medium carrots, diced
- 1 large yellow onion. diced
- 2 stalks celery, finely chopped
- 1 can (28 oz.) diced tomatoes
- 8 oz. chicken breast, cooked and coarsely chopped
- 8 cups chicken broth, low sodium
- 2 large red bliss potatoes, diced
- 1 can (16 oz.) cannellini beans, rinsed
- 1 Tbsp. dried thyme
- 1 Tbsp. Herbs de Provence
- 2 cups fresh spinach
Directions:
- In a large pot, sauté the sausage and break it up into small pieces. Once browned, remove the sausage and drain in a paper towel lined bowl.
- Add the carrots, onions and celery to the pot. Sauté until the onions are translucent.
- Add the cooked sausage, tomatoes, chicken, broth, potatoes, cannellini beans, thyme and Herbs de Provence.
