Zesty Tomatoes and Cheese

Ingredients:

  • 2 large tomatoes, sliced into 3 slices each
  • ½ cup grated parmesan cheese, low sodium
  • 2 Tbsp. parsley (or oregano)
  • 2 tsp. olive oil
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 450°F.
  2. Place tomatoes on baking sheet. Top with cheese, parsley and seasonings.
  3. Drizzle with oil and bake until cheese browns (about 10 minutes).
