Ingredients:

  • Zero-calorie cooking spray
  • 1 cup diced red pepper
  • 1 cup diced white onion
  • 1 cup diced green pepper
  • 1 cup sliced mushrooms
  • 2 minced garlic cloves
  • 2 cups chopped spinach
  • 4 whole eggs
  • 4 egg whites

Directions:

  1. Spray a pan with zero-calorie cooking spray and bring to medium heat
  2. Add red pepper, onion and green pepper to the pan and saute for 5 minutes
  3. Add mushrooms, garlic and chopped spinach and cook for 2 minutes
  4. Whisk egg and egg whites in a separate bowl
  5. Mix veggies into eggs
  6. Pour mixture into greased muffin tin
  7. Bake at 350 degrees for 15 minutes
  8. Store extras in a sealed container in the fridge
