Ingredients:
- Zero-calorie cooking spray
- 1 cup diced red pepper
- 1 cup diced white onion
- 1 cup diced green pepper
- 1 cup sliced mushrooms
- 2 minced garlic cloves
- 2 cups chopped spinach
- 4 whole eggs
- 4 egg whites
Directions:
- Spray a pan with zero-calorie cooking spray and bring to medium heat
- Add red pepper, onion and green pepper to the pan and saute for 5 minutes
- Add mushrooms, garlic and chopped spinach and cook for 2 minutes
- Whisk egg and egg whites in a separate bowl
- Mix veggies into eggs
- Pour mixture into greased muffin tin
- Bake at 350 degrees for 15 minutes
