One of our favorite cues that it’s summer—besides lightning bugs, of course–is the arrival of baskets of snap peas at the farmers market or grocery store. In this episode of Nutrisystem’s #VeggieSexy video recipe series, staff dietitian Mandi Knowles shows how to prepare them in a super-simple recipe that will have you enjoying this unlimited veggie in less than a minute. In addition to being fun to eat, snap peas are a great source of vitamins, minerals, antioxidants and even phytosterols, which help reduce cholesterol. Pair with Nutrisystem’s Mushroom Stuffed Chicken Breast and you have a delicious, healthy and nutritious dinner.
- Microwave in bowl with wet paper towel for 2-3 minutes until pods are bright green
Snap peas are great eaten raw. You can put them in a salad or they’re great by themselves as a snack. You can also cook them in the microwave. Put the snap peas in a bowl and place a damp paper towel over top. [0:00:19] Put it in the microwave on high for two minutes. When they are done they are a bright vibrant green. And they’re great to pair with our Mushroom Stuffed Chicken Breast. [0:00:28]
To cook the Mushroom Stuffed Chicken Breast, first take it out of the wrapper. Place it on a microwave-safe plate. Microwave on high for two minutes and 15 seconds and let the chicken stand in the microwave for one minute.[0:00:41]
