Roasted Artichokes: A Savory Side Dish You Need to Try

Mandi Knowles: Artichokes can look pretty intimidating in the grocery store, but don’t worry. We’re going to show you a simple way of how to cook them. We’re going to roast them.

First, you’re just going to cut off one-third of the top of the artichoke, and then you’re going to cut off the bottom. The end of each of the artichoke leaves has a little spinal in it like a cactus so grab a pair of scissors and cut that spine off.

Next what you need to do is take a knife and cut out the middle, and you just work your knife around. So pull out the middle and it’s going to make the artichoke into a little bowl. Spread each of the leaves open, and this will ensure that all the seasonings get in between each leaf. Then grab your salt and pepper, squeeze a little fresh lemon on top of each one. You can put whole garlic cloves in the middle or you can sprinkle it with a little garlic powder.

Next you’re going to want to spray each artichoke with some cooking spray. [Spraying sound] Take some tinfoil and wrap each artichoke in the tinfoil tightly. [Wrapping sound] And then you’re going to throw it in the oven at 425° for about 60 to 80 minutes.

To eat your roasted artichoke remove a leaf and kind of use it as a spoon to eat the meat. Here we paired the finished artichokes with our grilled sausage and peppers. To make the sausage and peppers place the bag on a microwave-safe plate with the instructions facing up. Flatten the bag and put it in the microwave for four minutes. Shake the bag side to side to mix everything. Put it back in the microwave for another minute, and then let it rest for one minute. Take it out of the microwave and cut along one edge, and then grab the other end of the bag and pour the contents onto the plate.

Ingredients:

  • 2 artichokes
  • 1 lemon
  • Olive oil spray
  • Salt and pepper
  • Garlic cloves or garlic powder

Directions:

  1. Preheat oven to 425°F.
  2. Cut the bottom stem and top ¹⁄₃ off artichoke with a sharp, serrated knife then use a small paring knife to hollow out and discard inner, center leaves.
  3. Spread artichoke leaves out as much as you can then squeeze half a lemon and spray with olive oil spray on each.
  4. . Season with salt and pepper, then stuff peeled garlic cloves in the center or sprinkle with garlic powder.
  5. Wrap tightly in a large sheet of foil and roast for 60-80 minutes or until very tender.
