Ingredients:

  • 1 cup whole wheat pastry flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • 1 large egg
  • 3 Tbsp. Truvia Sugar Blend (cane or brown sugar)
  • ¼ cup nonfat milk
  • ¼ cup nonfat plain Greek yogurt
  • 2 Tbsp. light butter, melted
  • 1 tsp. vanilla extract
  • 1 cup blueberries
  • Glaze
  • ½ cup blueberries
  • ¼ cup + 2 Tbsp. fat free cream cheese, room temperature

Directions:

  1. Preheat oven to 350 degrees F. Spray a donut pan with non-stick spray.
  2. Whisk egg, Truvia, milk, yogurt, butter and vanilla in a medium bowl until fully combined.
  3. Add flour, baking powder and baking soda. Stir until combined (batter should be thick).
  4. Gently stir in 1 cup of blueberries.
  5. Spoon batter into donut pans. Fill about 2/3-3/4 the way full.
  6. Bake for 10 minutes. Remove from pan and let cool.
  7. To make the glaze, add ½ cup blueberries to a small pot and set to medium-high. Once blueberries start to release juices, adjust heat to low and simmer for 5 minutes.
  8. Add blueberries and cream cheese to food processor and process until well combined.
  9. Top cooled donuts with glaze.
