A sweet, fruit filling is created from fresh peaches, nutmeg and brown sugar. A crispy cobbler crust is made by combining a few tasty and simple ingredients.

In a large bowl, add flour, baking powder, cinnamon and brown sugar. In a smaller bowl, mix eggs, butter, vanilla and milk. Add this to the larger bowl and stir thoroughly until you get a batter-like consistency. In a baking dish, add the peaches and batter and bake for approximately 35 minutes (or until golden brown!).

Ingredients:

  • 3 cups sliced peaches, skins removed
  • ½ tsp. ground nutmeg
  • 4 Tbsp. Truvia Brown Sugar Blend
  • ½ cup whole wheat flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 large eggs
  • 1 Tbsp. light butter, melted
  • 1 tsp. vanilla extract
  • ½ cup nonfat milk

Directions:

  1. Preheat oven to 350°F. Spray an 8” square baking dish with nonstick spray.
  2. In a large bowl, stir together peaches, nutmeg and 2 Tbsp. of the brown sugar blend. Set aside.
  3. In another large bowl, combine flour, baking powder, cinnamon and remaining 2 Tbsp. of the brown sugar blend.
  4. In a small bowl, combine eggs, butter, vanilla and milk.
  5. Pour liquid mixture into flour mixture and stir until it becomes a batter-like consistency.
  6. Pour peaches into baking dish. Spread batter over the top of the peaches. Bake for about 35 minutes or until batter becomes brown.
  7. Let sit for about 30 minutes before serving.
