Blueberry Quinoa and Corn Salad

We like to think of spring and summer recipes as being fruity, a little sweet and, of course, healthy! Our Blueberry Quinoa and Corn Salad with a lemon vinaigrette dressing hits all the marks.
The bed of this yummy salad is made by two cups of arugula topped with corn, quinoa, goat cheese and, tastiest of all, blueberries—our mouths are already watering! Drizzled over this sweet salad is a lemon vinaigrette with the perfect amount of bitterness to balance the bursts of flavor in this tasty salad.
The lemon vinaigrette is super easy to whip up as well. The main ingredients that go into the vinaigrette are olive oil, lemon juice and lemon zest—seasoning it to taste with black pepper.

Ingredients:
- 2 cups blueberries
- 1 cup cooked quinoa
- 1 cup yellow corn
- 2 cups arugula
- ½ cup goat cheese
- 1 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 tsp. lemon zest
- Black pepper, to taste
Directions:
- To make Lemon Vinaigrette- mix together all ingredients.
- Prepare the salad by adding blueberries, quinoa, corn, arugula and goat cheese in a salad bowl. Pour in vinaigrette and toss to combine.
