Ingredients:

  • 2 slices ciabatta bread or 1 ciabatta roll
  • 2 large egg whites
  • ¼ cup low fat Mexican cheese, shredded
  • 2 Tbsp. salsa
  • 2 Tbsp. avocado, mashed

Directions:

  1. Heat pan to medium/high heat and spray with nonstick spray.
  2. Pour egg whites and cook for about 1 minute. Flip and cook for 1 more minute.
  3. On one slice of the bread, spread mashed avocado. Top with salsa then egg whites then cheese. Finally, top with other slice of bread.
  4. Place assembled sandwich in a preheated panini press. Press lid down and allow to cook for a few minutes until crispy.
  5. Heat pan to medium/high heat and spray with nonstick spray.
  6. Pour egg whites and cook for about 1 minute. Flip and cook for 1 more minute.
  7. On one slice of the bread, spread mashed avocado. Top with salsa then egg whites then cheese. Finally, top with other slice of bread.
  8. Grease a heated skillet with nonstick spray and place assembled sandwich in the center. Lay another pan, plate, or lid on top of the sandwich. Weigh down with heavy objects or just push down on the surface of the sandwich. Cook for a couple minutes until crispy and flip and cook for a couple minutes.
  9. Heat pan to medium/high heat and spray with nonstick spray.
  10. Pour egg whites and cook for about 1 minute. Flip and cook for 1 more minute.
