Chocolate Cranberry Zucchini BarsTo make them, preheat your oven to 350 degrees and grate some zucchini. Squeeze the grated zucchini in a cheesecloth or kitchen towel to remove most of the excess water. Set it aside to prep the remaining ingredients. 

In a blender or food processor, combine almond butter, maple syrup, pitted dates, dry oats, eggs, baking soda and cinnamon. Stir the zucchini into the batter, then pour it into a square baking dish (9×9 or similar). Top the dish with chocolate chips and dried cranberries before placing the dish in the oven.

Bake your chocolate zucchini bars for 35 to 40 minutes, until the top is nice and golden. Let the bars cool completely before slicing and serving up this simple snack.

Ingredients:

  • 1 ½ cups grated zucchini
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • 8 dates, pitted
  • 2 cups dry oats
