Ingredients:
- 1 Tbsp. olive oil
- 1 onion, chopped
- 2/3 cup uncooked brown rice
- 3 cloves garlic, minced and divided
- 1 tsp ginger, grated
- pinch of red pepper flakes
- 2 cups chicken or vegetable broth, low sodium
- 3 cups frozen broccoli
- 1 cup frozen bell pepper strips
- 1 lb. uncooked shrimp, peeled and deveined, leaving the tails on
- 2 Tbsp soy sauce, low sodium
- 2 Tbsp honey
- 1 tsp cornstarch
- 1 Tbsp water
- 1 scallion, chopped
Directions:
- Heat oil in a Dutch oven over medium heat. Add onions and cook until softened.
- Add rice, 2 cloves of garlic, ginger and red pepper flakes. Cook for 2-3 minutes.
- Add broth and bring to a boil. Reduce heat to a simmer, cover and cook for 10 minutes.
- Add broccoli, bell peppers and shrimp. Stir to combine. Cover and let cook for 30-40 minutes, stirring every 10 minutes, until rice is soft and shrimp is fully cooked.
- In a small saucepan, add the remaining garlic, soy sauce and honey. Heat until honey is dissolved.
- In a separate small bowl, combine cornstarch and water to a thick paste. Pour cornstarch mixture into honey mixture. Stir, then remove from heat to let thicken.
- Serve shrimp and rice dish with a drizzle of the honey sauce and garnish with chopped scallions.
