Servings: Makes 10 servings

Calories per Serving: 98

On Nutrisystem, Count As: 1 SmartCarb


  • Dry Ingredients:
  • 1½ cups gluten-free cornmeal
  • 2 tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • Wet Ingredients:
  • 1 egg
  • ½ cup fat-free plain Greek yogurt
  • ½ cup skim milk
  • ¼ cup unsweetened apple sauce
  • 2 Tbsp. Truvia baking blend
  • 1 tsp. maple extract


  1. Preheat oven to 400° F. Spray an 8x8 baking dish with cooking spray. Set aside.
  2. Mix together dry ingredients. In a separate bowl, whisk together wet ingredients. Slowly add the dry ingredients to the wet and stir until just moistened.
  3. Pour into prepared baking dish and bake for 15-18 minutes or until a toothpick comes out clean. Let cool completely before slicing.
