It’s a simple hack that takes a seasonal veggie to the next level.
Get started with this recipe by slicing up three green tomatoes into quarter-inch slices. Preheat your grill to medium-high heat, then grill the tomato slices for about two to three minutes per side. The tomatoes should have grill marks and appear slightly soft yet still firm. Layer the green tomato slices on a plate, alternating with fresh slices of mozzarella cheese.
Caprese salad isn’t complete without balsamic! Mix together a two-ingredient balsamic vinegar dressing by combining one tablespoon of olive oil with one tablespoon of white balsamic vinegar. Drizzle it over the salad plate and finally garnish with black pepper and chopped fresh basil.

Ingredients:
- 3 green tomatoes, sliced ¼-inch thick
