How to Make Peppermint Bark the Healthy Way

The first step to making healthy peppermint bark is melting the chocolate in the microwave. Place chocolate chips in a microwave-safe bowl and heat them for 30 seconds at a time, stirring frequently until they are completely melted. Pour the melted chocolate onto a pan lined with parchment paper, spreading it into a thin, even layer. Place the pan in the freezer for about 10 minutes.

Next, mix together nonfat plain Greek yogurt with monk fruit sweetener, peppermint extract and vanilla extract. Spread the yogurt mixture on top of the frozen chocolate and sprinkle a crushed mini peppermint candy cane on top. Place the pan back into the freezer for two more hours. Break the peppermint bark into eight equal pieces and serve it frozen.

  • 1 Tbsp. monk fruit sweetener
  • 1/8 tsp. peppermint extract
  • 1/8 tsp. vanilla extract
  • 1 mini peppermint candy cane, crushed up

Directions:

  1. Melt chocolate in microwave for 30 seconds at a time, stirring frequently, until melted.
  2. Pour melted chocolate onto a parchment-lined pan, spreading it into a thin, even layer. Place in freezer for about 10 minutes.
  3. Mix yogurt, monk fruit, peppermint extract and vanilla extract together. Spread on top of the frozen chocolate. Sprinkle the crushed peppermint candy on top.
  4. Freeze for 2 hours.
